Abstract
HACCP ili u prijevodu analiza opasnosti na ključnim kontrolnim točkama je sustav osiguranja zdravstvene ispravnosti proizvoda. Radi se o sustavnom procesu kontrole tehnološkog procesa na način da se identificiraju sve potencijalne opasnosti u bilo kojem procesu proizvodnje, obrade, pripreme, prijevoza i distribucije proizvoda. HACCP sustav se može najjednostavnije reći da je sustav samokontrole, ali i sustav kvalitete kojim osiguravamo neškodljivost hrane . Obveza primjene HACCP sustava u Hrvatskoj određena je Zakonom o hrani (NN 2003.g.) uz prijelazno razdoblje do primjene od tri godine, tj. do srpnja 2006.g. Predmet rada je implementacija HACCP te njegova provedba u hotelu Aurora.
