Abstract	Sigurnost na radu u ugostiteljstvu obuhvaća prevenciju bolesti poput botulizma kroz higijenske prakse i pravilno rukovanje hranom. Botulizam je teška bolest uzrokovana bakterijom Clostridium botulinum koja stvara toksičan spoj u hrani, najčešće u mesnim proizvodima s dugim rokom trajanja. HACCP sustav (Hazard Analysis and Critical Control Points) je ključan za osiguravanje sigurnosti hrane, jer identificira potencijalne opasnosti, postavlja kritične kontrolne točke i definira mjere za kontrolu rizika u svim fazama proizvodnje hrane.
