Abstract
Vraćanjem autohtonih sojeva kvasaca u proizvodnju spriječio bi se mogući gubitak identiteta vina koji nastaje uslijed stalne upotrebe suhih selekcioniranih kvasaca. Autohtoni kvasac fermentacijom mošta iz njegovog domicilnog vinogorja ima bolje predispozicije za stvaranje vrhunskog prepoznatljivog vina čak i ako je mošt prosječne kvalitete. Ne manje važno jest sprečavanje uništenja prirodne populacije kvasca, kao i očuvanje biološke raznolikosti pojedinog ekološkog područja. Upotrebom selekcioniranih autohtonih sojeva izbjegava se uniformnost aromatskih karakteristika vina. Tako dobiveni proizvod odražava geografsku posebnost i specifičnost kultivara koji je nemoguće dobiti primjenom suhih selekcioniranih kvasaca.
