Abstract
Ovaj završni rad započet je s ciljem istraţivanja utjecaja različitih vrsta alkohola na kvalitetu likera od limuna, koristeći pritom i tri vrste alkohola. Rakiju jabukovaču, votku i rafinirani alkohol. Proizvedena su tri likera, kod kojih je primjenjena ista receptura te isti tehnološki postupak proizvodnje. Likeri su odleţavali petnaest dana, a potom su u svakome od ova tri likera analizirani fizikalno-kemijski parametri (šećer, alkohol, ukupne kiseline) na Institutu za Poljoprivredu i turizam u Poreču, koji su zatim na adekvatan način prikazani u različitim tablicama. Osim fizikalno-kemijskih analiza, provedene su i organoleptičke (senzorne) analize prema dvije metode, a to su DLG skala i metoda pozitivnih brojeva. Rezultati senzornog ocjenjivanja su pokazali da je najbolje ocijenjen liker od limuna s votkom čije su ocjene naznačene u tablicama.
